Bitter gourd
The best thing about going on holiday is discovering new dishes that you can create when you return home. During my recent trip to Okinawa, I discovered their most famous dish Goya Chanpuru.The dish consists of bitter gourd, pork, egg and tofu and is quite a simple dish to make. Basically you stir fry the bitter gourd, pork and tofu, add some water and cook till just tender. Finally pour two beaten eggs on top and stir slightly when the egg is cooked. I didn’t have any tofu at home, but it my first attempt at the dish turned out just as delicious, with a taste of Okinawa memory.
